Fruit Pizza on Sugar Cookie Crust

It was the 8th grade when my teacher made a grave mistake. She taught us all how to make a sugar bomb that energized all who ate it with a level very inappropriate for the classroom. Since that moment Fruit Pizza has been one of my personal favorites. Diabetes be damned, you can’t take away my fruit pizza. At least not after a large shot of insulin.

Ingredients

- Sugar Cookie Dough
- favorite fruits (kiwi, grapes, strawberries, orange, and apple seem to work best)

Cream Cheese Frosting

- 8oz. Cream Cheese (soft)
- 16oz. powder sugar (1 box)
- 1/2 cup butter
- 1/3 cup condensed milk

Preparation
First preheat the oven to 375. On a cookie sheet make the largest cookie you can. Try to not leave thick portions of sugar cookie. We are looking for a consistent crust for our pizza. The cookie will melt down and out as it bakes so leave room for expansion.

While the cookie bakes we want to make our sauce, or frosting for our pizza. Mix all the frosting ingredients very well until smooth.

Once the cookie is finished remove from the oven and let cool. Apply the frosting liberally over the top. Finish the whole thing off with slices of your favorite fruit. The more fruit the better.

Slice with a pizza slicer and serve. A great treat that serves a crowed!
